Nutrients can be incredibly complex and take years for the food system to produce. When they go uneaten, they're often left to rot.
Before Full Circle, the only use for uneaten nutrients was compost. During composting, many complex, valuable nutrients degrade into gas and disappear into thin air. Those that are left are so basic that only plants can use them.
This is like turning wood into sawdust, when there's a house next door waiting to be built.
